Chicken Drumstick Casserole

Sunday night – what to do for dinner.  Something easy, but something tasty.

Time for a new recipe.  This was SUPER easy to make and got the thumbs up from hubby.  It’s almost like a risotto with chicken drumsticks on the top.

Ingredients:

  • 2-1/2 lbs. chicken drumsticks
  • 1/3 cup flour
  • salt and pepper to taste
  • 3 tablespoons olive oil
  • 1 cup uncooked long grain rice
  • 1 onion, minced
  • 2 cloves garlic, minced
  • 2 cups sliced carrots
  • 2-1/2 cups chicken broth, heated to boiling
  • 3 tablespoons butter, melted
  • 1/2 cup grated Parmesan cheese

Preparation:

Preheat oven to 350 degrees. Combine flour, salt, and pepper in shallow plate. Roll drumsticks in flour mixture to coat. Heat oil in large skillet and brown drumsticks over medium heat, turning several times, about 5-6 minutes. Meanwhile, place the rice, more salt pepper, onion, and garlic in a 13×9″ glass baking dish. Add carrots and hot chicken broth along with melted butter.Arrange browned chicken drumsticks on top of the rice mixture and sprinkle with cheese. Cover and bake at 350 degrees for 45 minutes. Then uncover and bake for 15-20 minutes longer until chicken is thoroughly cooked and rice is tender. 6-8 servings
