Made these for dinner tonight – hubbys request. Didn’t have a recipe and so I just made it up and they tasted a treat. Easiest thing in the world to bake but can get a little messy – so as long as you don’t mind a bit of mess read on…

Recipe:
Two packs of sausage mince
2 eggs
1c breadcrumbs
2 carrots grated
handful of chives chopped finely
1tbl of finely chopped Basil, Parsley and Oregano (fresh if possible)
Packet of frozen puff pastry
Okay, so easy – throw the whole thing together (minus the puff pastry) and mix with your hands to ensure that everything is mixed through properly.
Thaw your sheets of frozen puff pastry out until they are easy to cut and fold over.
Cut each pastry sheet in half. In the middle of the pastry piece place some of the mixture from one end to the other.
Mix an extra egg into a teacup and use some of that dabbed on your finger to moisten the edges of the pastry, then join up and press together. It should look like a log.
Roll your log over and brush lightly with more egg. Cut into three pieces and make little prick holes in the top of each one, and place on a baking tray.
Repeat with the rest then bake on 190 C for around 20-30 minutes until the tops are crunchy and golden.

PS: These make HEAPS so if it’s just for two I would half the recipe.
